A light fluffy cake with a delicious crumble texture from the almond meal. You can use any berries you like.


Ingredients (makes 12 Friands)

  • 1 teaspoon Melted butter to grease tin
  • 2 cups icing sugar mixture
  • 150g almond meal
  • ½ cup plain flour
  • 6 egg whites
  • 180g butter melted
  • 1 cup frozen raspberries
  • 2 tablespoons flaked almonds
  • Icing sugar to decorate

Method

  1. Preheat oven to 180degrees. Brush friand tin with melted butter
  2. Combine the icing sugar, almond meal and flour into a bowl. Using a whisk, beat the egg whites until soft peaks form. Stir the butter into the flour mixture. Fold in half the eff whites until combined and repeat with remaining eff whites. Gently fold through ¾ of the raspberries
  3. Divide mixture among prepared tins and top with flaked almonds and remaining raspberries. Bake for 25-30mins or until a skewer comes out clean. Transfer to a wire rack to cool and dust with icing sugar
